Food & Beverage Stock Controller
Job summary
We are seeking a hiighly analytical F&B Cost Controller to manage our inventory lifecycle and cost structures. Highest priority is checking stock depletion directly against sales numbers. You will act as the financial anchor of our F&B operations, ensuring that every plate served and bottle opened aligns perfectly with our revenue and budget.
Job descriptions & requirements
- Sales-to-Usage Alignment: Check daily food and beverage sales directly against stock usage to ensure depletion perfectly matches revenue.
- Wastage & Cost Control: Monitor kitchen and bar wastage, identify areas to reduce unnecessary costs, and ensure all restaurant cost-control procedures are strictly followed.
- Stock Variance Audits: Carry out regular physical stock counts, investigate inventory shortages, and resolve any unusual cost discrepancies immediately.
- Purchasing Verification: Audit daily purchases, supplier invoices, and goods received to ensure accurate pricing and proper recording.
- Financial Reporting: Compare actual operational costs against the budget and prepare comprehensive daily, weekly, and monthly cost reports.
- Menu Costing: Assist culinary and management teams with precise food and beverage menu costing to ensure optimal profit margins.
- Cross-Department Collaboration: Work seamlessly with the Kitchen, Stores, Purchasing, F&B Service, and Finance teams to streamline operations.
- What You Bring (Requirements)
- Education: Diploma or Bachelor's degree in Accounting, Finance, Business Administration, or a closely related field.
- Experience: At least 3+ years of proven experience in hotel/restaurant accounting or cost control. Prior hospitality environment experience is highly advantageous.
- Technical Skills: Advanced proficiency in Microsoft Excel and a deep knowledge of food, beverage, and stock control methodologies.
- Core Traits: Exceptional numerical and analytical skills with high attention to detail and accuracy.
- Soft Skills: Strong communication and organizational skills, with a reputation for being honest, reliable, and capable of working under minimal supervision.
